Banana and sweet potato cookie
Ingredients:
- 3 eggs
- 100 gr of sugar
- 100 g of white flour
- 100 g wholemeal flour
- 12 g baking powder
- 30 g of cocoa powder
- 50 gr hazelnuts
- 70 ml cooking oil
- 1 banana
- 300 gr sweet potatoes
Preparation:
Stir the eggs with the sugar and oil until frothy.
In a bowl, mix the flour, ground hazelnuts, cocoa powder, baking powder. The mixture is added to the egg portion with constant stirring. At the very end, add the banana-sweet potato puree and mix until smooth.
The dough is added to a loaf of bread lined with parchment paper.
Bake the cake in a 180 C oven for 45-50 minutes.
